Caramel Corn

I had a craving for caramel corn last night and found this recipe on The Food Network. It is really easy and you dont need the candy thermometer. It makes 8 quarts, so its alot but would be good for those big families or a party.

Im not sure how much unpopped corn but mine filled about 2 big popcorn bowls full and that was enough. Just measure as you go along.

Preheat oven to 200 degrees. Put the popped corn in a large roasting pan.
1 C. Butter
2 C. Brown sugar
1 t. salt
1/2 C. light corn syrup
1 t. baking soda

Put the first 4 ingredients in a heavy duty sauce pan. Cook on medium until it starts to boil. Boil for 5 minutes. Take off the heat and add the baking soda and stir well. Pour over popped corn and stir well. Bake in oven for 1 hour, stirring every 15 minutes. Then lay on wax paper to cool.

So yummy, my family can't get enough.

Wax paper! That's what I forgot while I was out shopping this morning! I ALWAYS forget something! Sounds yummy, we'll have to try this one! :)

OH my word...I have been just craving caramel corn! I just hate the baking part...I wish there was instant caramel corn!
